The variety of the wood determine the flavor of the smoke- there are no additives to the natural woods that make up the bisquette. Apple: A sweeter flavor which is milder than some others, apple is commonly used with wild game and poultry
Alder: Often used with seafood, hams and bacon. has a rich and "distinct" flavor

Hickory: A strong flavor that is most often used with game meat, beef and pork
